Whipped Potatoes

Ingredients

  • 4 lbs russet potatoes
  • 1 1/2 cup whole milk
  • 8 tbsp butter (1 stick)
  • 2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Cut potatoes into 1 inch pieces
  • Rinse under running water for 1 min
  • Steam potatoes about 20 - 25 minutes
  • Melt butter in milk. Add salt and pepper.
  • Remove from heat and cover to keep warm
  • Heat potatoes in dutch oven to dry out. (I don't usually do this.)
  • Break up potatoes with a mixer on low speed.
  • Gradually add in milk mixture
  • Mix at high for a couple of minutes
