Lou's Orange Slice Cake
Ingredients
- 1 cup Butter
- 2 cup Sugar
- 4 Eggs
- 1 tsp Baking Soda
- 1/2 cup Buttermilk
- 3 1/2 cup All Purpose Flour (add Orange rind zest)
- 4 oz or 1 can Flaked Coconut
- 1 lb Chopped Dates
- 1 lb Chopped Orange Slices
- 2 cup Chopped Pecans
- 1 cup Fresh Orange Juice
- 2 cup Powdered Sugar
Instructions
- With mixer cream butter and sugar until smooth
- Add eggs one at a time
- Dissolve soda in buttermilk and add it to cream mixture
- Place flour in large bowl. Add orange slices, nuts and coconut. Mix well with flour. Add creamed mixture and mix well with hands. Makes very stiff dough
- Grease a 13 x 9 x 3 inch pan or a very large tube pan
- Bake at 250 degrees for 2 1/2 to 3 hours
- Poke holes in cake after done. Mix fresh orange juice and powdered sugar and pour over cake.
- Let stand in pan 24 hours
