Lou's Chocolate Pie

Ingredients

  • 1/2 cup Flour
  • 1 pinch Salt
  • 3 tbsp (Heaping) Cocoa powder - about 1/3 cup, 1/2 is too much
  • 1 cup Sugar
  • 3 cup Milk
  • 4 egg yolks beaten
  • 1 tsp Vanilla
  • 1/2 or 1 full stick butter

Meringue - prepare before pie so you can put it on a hot pie.

  • 4 Egg whites
  • 1/2 cup Sugar
  • 3/4 tsp Cream of tartar

Instructions

  • Mix all dry ingredients and set aside. Good idea to sift to remove lumps from flour. Alternate way is to use a whisk.
  • Heat milk to scalding and quickly add dry ingredients. Stir well.
  • Temper in egg yolks.
  • Stir until thick.
  • Remove from heat and stir in vanilla and butter.
  • Pour into baked/prepared pie shell.

Meringue

  • Spoon onto pie and bake at 350 for about 10-15 min until peaks start to brown. Chill one hour before serving

To make Coconut

  • Reduce sugar to ¾ cup and add 1 cup shredded coconut instead of cocoa after egg yolks.
