Lou's Chocolate Pie
Ingredients
- 1/2 cup Flour
- 1 pinch Salt
- 3 tbsp (Heaping) Cocoa powder - about 1/3 cup, 1/2 is too much
- 1 cup Sugar
- 3 cup Milk
- 4 egg yolks beaten
- 1 tsp Vanilla
- 1/2 or 1 full stick butter
Meringue - prepare before pie so you can put it on a hot pie.
- 4 Egg whites
- 1/2 cup Sugar
- 3/4 tsp Cream of tartar
Instructions
- Mix all dry ingredients and set aside. Good idea to sift to remove lumps from flour. Alternate way is to use a whisk.
- Heat milk to scalding and quickly add dry ingredients. Stir well.
- Temper in egg yolks.
- Stir until thick.
- Remove from heat and stir in vanilla and butter.
- Pour into baked/prepared pie shell.
Meringue
- Spoon onto pie and bake at 350 for about 10-15 min until peaks start to brown. Chill one hour before serving
To make Coconut
- Reduce sugar to ¾ cup and add 1 cup shredded coconut instead of cocoa after egg yolks.
